A woman who is very keen on chocolate once gave me some splendid chocolate, and saw me bite a great bit off, and said ‘No, no, no, don’t you know how to eat chocolate?’ And I said, ‘No, or at least I thought I did’, and she said, ‘No, you just take a tiny bit, put it on your tongue, ten minutes it will take, just let it melt, occasionally push it up against the roof of the mouth, and this great rainbow of flavours and textures melts in your mouth.’ Now that’s all poetry is in a sense.² ...
